We all know that baking and cooking has to be quick and delicious in order for us to really want to make anything . Let’s face it, who has time for a recipe that has 15 ingredients or more…. not me!! So I am sharing a few staples from my house that are all delicious, healthy and super easy with 6 ingredients or less! Try them and comment and let me know how you like them. Who does not like fresh banana bread?? Such a yummy snack and great to pack in lunchboxes and on the go. This Banana Bread has no eggs, no refined sugar, no butter!!! What?? I can hear you screaming, but trust me it tastes amazing!Simple to make with only 6 ingredients! Make two loaves and freeze one! You can always add a handful of vegan or milk chocolate chips as well for a treat or even a few dollops of jam on the batter!!
BANANA BREAD
- 3 soft mushy bananas
- 1/2 cup date syrup
- 3 tbsp canola organic oil
- 1.5 cups wholemeal flour
- 1tsp baking powder
- 1tsp vanilla
Mash bananas in a bowl, add oil, vanilla and date syrup
Mix baking powder with flour.
Add to the banana mixture until just combine, do not over mix or it will be a rubbery cake!
Pour into greased loaf tin, bake about 40 mins on 350c or until knife comes out clean
Eat and enjoy! Delicious with plain greek yoghurt or coconut yoghurt
Don’t know about you, but for me, I love a good cuppa in the afternoon with a snack. A few of these cookies hit the spot and knowing they are good for me, the guilt is nowhere to be found! They last well in an airtight container and have less than 6 ingredients!
CRUNCHY COOKIES
- 1/3 cup liquid coconut oil
- 1 tbsp chia seeds in 3 tbsp water
- 3 scoops vanilla or chai protein powder,( I use a great plant based protein powder)
- Sprinkle of cinnamon
- 1/2 cups oats
Mix all together
Scoop into balls and flatten with a fork , bake 20 mins on 350c
Store in an airtight container.
This summer has been amazing!! Beautiful hot weather so who feels like cooking much ?? This simple salad is full of less than 6 ingredients , it is super fresh and delicious and takes no time at all to make. It goes great with fish or meat!
CORN/CILANTRO SALAD
- 1 red onion, diced
- 1 bunch fresh cilantro, chopped
- 1 avocado, diced
- 4 fresh corn on the cob, cooked lightly and cut off the cob
Add all ingredients into a bowl
Drizzle olive oil and the juice of a lime and mix. YUM!
