I have not eaten meat in over 8 years now and there are very few things about it that I miss. So when I make hamburgers for my family, I make beetroot burgers for me! They make 4-6 patties, depending on how large you like them and I freeze some as well. Beets have wonderful health benefits and studies now show that they can help lower blood pressure!I never used to like beets, but after roasting them and eating them like chips, grating them on my salad and now these beet burgers, I have to confess, I am rather beet obsessed!!
I got this recipe from a fabulous PDF cookbook my sister sent me from her work. The cookbook is all mainly plant based and has great tips on cutting down on food waste such as :
Learn to love YOUR FRIDGE AND FREEZER.
And have a pen nearby to label what your food is, and the date it was stored. When my berries and bananas go soft, I simply put them in the freezer and use them for smoothies!
Put fresh fruits and vegetables straight into the fridge
when you come home from grocery shopping. I spend a little time washing , drying and chopping. I peel and cut my carrots into thick sticks and them place them in water, they are known in my house as “water carrots”. Keeps them fresh and crispy, even the dog loves his carrots! I do the same with celery sticks.
Store your food in see-through containers
so you can easily see what you’ve got next time you’re rummaging through the fridge.
