CHOCOLATE CHIP COOKIES (GLUTEN FREE AND VEGAN BUT DELICIOUS!)
I have been experimenting with Paleo desserts as the variety is huge and they do not use refined sugar and processed flours.These cookies were a huge hit in my house and I have adapted them from the Paleo Sweets cookbook.
INGREDIENTS:
1 1/2 cups almond flour
2 tbsp arrowroot starch
1/4 tsp pink himalayan salt
1/2 tsp baking soda
2 tsp vanilla essence
1/3 cup maple syrup
1/4 cup melted coconut oil
1/3 cup vegan choc chips
Nuts are optional but can use 1/3 cup chopped walnuts, pecans or even almonds.
- Preheat oven to 350c and line a cookie sheet with parchment paper
- Combine almond flour, arrowroot, salt and baking soda. Stir to combine
- Combine vanilla, maple syrup and coconut oil and stir to combine.
- Add the wet mixture to the dry, fold in chocolate and nuts.
- Use a soup spoon and or mini ice cream scoop and drop spoonfuls onto cookie tray leaving space between them.
- Bake 10-15 mins or until brown around the edges, they are light in colour.
Let cool.
