Who said you can’t indulge once in a while? I like to take a favourite and find a healthier alternative.Here is a delicious, easy to make, dairy free brownie recipe that I got from the Paleo Sweets recipe book and I changed things up a bit. The chili pepper gives it a great kick, if you want it hot hot add the cayenne pepper too!
Ingredients:
1/2 cup vegan chocolate chips (divided) 1/3 cup melted coconut oil
1 cup organic spelt flour or you can use almond flour
2 tsp cinnamon 1/4 tsp cayenne pepper
1/2 tsp chili powder 1/4 tsp nutmeg 1/4 tsp ground coffee
1 cup coconut or cane sugar 3 eggs 1 tbsp vanilla essence
Method
Preheat oven to 350f
Line a brownie tin, 8×8 baking tin with parchment paper.
In a small saucepan heat coconut oil and 1/4 cup chocolate chips over low heat until melted. When they are melted remove from seat and set aside.
In a medium bowl, combine flour, spices, coffee and sugar and mix. Add melted chocolate and oil and mix.
Add eggs and vanilla and mix to completely combine. Pour into prepared baking pan and sprinkle with remaining 1/4 cup chocolate chips.
Bake for about 20-25 mins or until tester inserted in the middle comes our mostly clean.
Cut into squares and enjoy!
