I know breakfast is the most important part of the day and I really love my breakfasts! However, I tend to get in a rut and eat the same thing over and over again. So I am trying to shake things up a bit and add some variation to my breakfast which is important so I don’t end up get bored with what I am eating. I am also on a mission to fight the dreaded hormone pounds and so I am keeping my sugar intake low and eating the good carbs. Oats are a wonderful source of fiber and a great carb to eat. They can lower cholesterol and lower blood sugar levels and it is filling and satisfying.
The protein in the pancakes come from two sources, a vegan plant based protein powder and from the egg whites. I use a vegan plant based protein as it is much easier to digest than other protein powders . Being a vegetarian I know that one scoop gives me 10g of protein and lots of minerals and vitamins. The egg whites give me another 13g of protein!! Together that is a whooping 23g of protein in the pancakes!!
These protein packed power pancakes are really delicious and you can add so many different toppings. You can top the pancakes with no fat, unsweetened greek yoghurt, maple syrup, fresh fruit, almond butter or date syrup , it just depends on what you are craving.
This recipe makes one large pancake which I have actually had for lunch before or four small ones if you like to make a stack!
Ingredients:
1/2 cup egg whites 1/2 cup gluten free oats
1 scoop Chai Vegan Protein Powder cinnamon to taste
Blend all four ingredients with a hand blender until a relatively thick paste is formed. Spray a frying pan and make four pancakes or one large. Cook and flip to cook the other side.
Top with toppings.
