I am all for eating well and exercising not just for weight loss but to make us feel more energized and healthier. I work out to keep fit yes, but it is also a huge stress reliever and is sacred to my sanity!
But, I also believe in moderation and knowing that it is perfectly ok to indulge once a week as long as that indulgence does not turn into a daily habit. I used to be a Monday girl , Monday was diet day, Monday, I was back on track,Monday I will only eat veggies … you get the picture….does it sound familiar?? My sister and I would indulge Sunday night knowing that Monday was the big “D” day!
But I have worked hard to get out of the Monday syndrome and know that if I eat something indulgent one day then the next day just get myself back on eating right. It is so much easier and actually a lot less stressful!
So, today I decided to post an indulgent recipe using Tim Tams. Tim Tams are an Australia biscuit or cookie I grew up with . They are just super delicious and now there are multiple flavours all as delicious as the next. Fortunately and unfortunately I can buy a few flavours of Tim Tams here in Montreal. For a seriously delicious look try to buy white chocolate and milk chocolate Tim Tams to alternate !Google online where to buy Tim Tams in your area. These cookies are seriously delicious and you cannot substitute! This Tim Tam cheesecake seems decadent and rich and whilst it is, it contain low fat cream cheese and no fat , plain, unsweetened Greek Yoghurt so it is actually less sweet and a tiny bit tart. If you like it sweet, then I would add another 1/4 cup of sugar.
No bake, no eggs but plenty of love goes into this delectable cheesecake.

NO BAKE TIM TAM CHEESECAKE
INGREDIENTS
2 packets caramel or any flavour Tim Tams
50g melted butter
2 packets of philadelphia low fat cream cheese
1/4 cup white sugar (1/2 cup if you want it sweeter)
2 heaped soup spoons of no fat, plain , unsweetened Greek Yoghurt
1 tsp vanilla essence
3 oz White chocolate melted
3 oz milk or dark chocolate melted
METHOD
Line a small springform pan with parchment paper on the bottom and the sides, spray the tin first to make the parchment paper stick down.
To make the base crush about 8-10 Tim Tams and mix with the melted butter until it is well combined and then spread it on the base and pat down. Take Tim Tams and place all around the side, you will use almost a packet. Place in the fridge.
To prepare the filling, place the cream cheese and sugar in a bowl and beat with electric beaters until combined and creamy. Then add the Greek Yoghurt and a teaspoon of Vanilla essence, beat until combined.
Divide the batter into two bowls. In one bowl mix the melted white chocolate in the batter until combined, in the other bowl, mix the milk chocolate in the batter until well combined.
Remove the cake tin from the fridge and spread half of the batter on top of the base. Place in fridge for ten minutes, then spread the other half of the batter on top. Decorate with crushed Tim Tams and place back in the fridge for a few hours of overnight.
